One time we made Thai Peanut Pizza and it was delicious. I was looking through Hungry Girl’s 200 under 200 and found her Kickin Peanut Sauce, and decided to use that to make the pizza.
Ingredients
1/3 cup plus 2 tbsp plain light soymilk
1/4 cup plain fat-free yogurt
1 1/2 tbsp reduced-fat peanut butter
1 1/2 tbsp light/low-sodium soy sauce
1 1/2 tbsp soy nuts (I couldn’t find em so used flaxseed)
1 no-calorie sweetner packet
1/4 tsp crushed garlic
1/4 tsp dried minced onion
1/8 tsp cayenne pepper
Place all ingredients except for yogurt in a small saucepan. Bring to medium-low heat. Stirring constantly, cook until ingredients are thoroughly blended.
Remove from heat and let cool.
Mix in the yogurt, stirring until sauce is lump-free.
I then spread this on a pre-made pizza crust. Added Morningstar’s Chik’n patty, mozzarella cheese, and black beans.
